Tuna-fish & Mash potato muffins. 2010.
When my karaoke business contracts tried up and I was doing fill-ins for other karaoke shows and had very little money coming in, I had to get very creative in deciding how to make ends meet.
One of those ways was getting creative with dinner. I shopped (and still shop) at the local Dollar Tree, for our groceries and supplemented those items with goods from a nearby food pantry.
One of the things I noticed that they always gave me was dried mashed potato mix and canned tuna. So, once or twice a week, I turned them into either pancakes or muffins. Lucky for me (and my hungry minions), they were a hit.
Now that we can afford better food choices, we don’t do this recipe, anymore, but, lately, I’ve found myself craving these, again (after all, they were really good).
Below, is the recipe that I concocted for the pancake version. For the muffin version, just add a little more potato.

Tuna/Fish & Potato Pancakes
The recipe is SO easy and serves 2-3 people.
8-oz pkg of instant mashed potatoes (or 2 cups of mashed or hash browned potatoes)
6-oz can of tuna or other canned fish of your choice, drained.
1 egg (or 1 egg per every 6-oz of fish)
Salt and pepper to taste.
1) Prepare the potatoes as directed by the box.
2) Stir in tuna, egg, and seasonings.
3) Drop liberal spoonfuls (1/2 cup) onto well-oiled skillet set to med-low.
4) Cook until golden brown on both sides (about 2 min/side)
5) Serve warm with your choice of condiments or nothing at all =)
Makes about 8-10 yummy potato pancake patties.
